Strawberry Tuffles
Dried strawberries and almonds with crunchy pistachio pieces, coated in dark chocolate. According to my friends, who are big fans of my truffles, these are the best ones so far 🙂 I hope you’ll like them too ❤️
🛒 Ingredients
• 140 g dried strawberries
• 150 g almonds (blanched or unblanched)
• 30 g pistachios
• 10 dates
Decoration (optional)
• 100 g dark chocolate (85%)
• 1 tsp coconut oil
• dried raspberries / chopped nuts
👩🏻🍳 Instructions
1. Cover the almonds with hot water and soak overnight.
2. Rinse the almonds and remove the skins. If preferred, use blanched almonds.
3. Remove the pits from the dates.
4. Blend the almonds, strawberries and dates until you get a soft mixture with small nut and fruit pieces.
5. Shape into truffles and freeze for about 2 hours.
6. Melt the chocolate and coconut oil over a double boiler.
7. Dip each truffle into the chocolate and decorate with pistachios, dried raspberries or chopped nuts.
Store in an airtight container in the fridge.
