Sunflower Seed Cookies
These incredibly tasty cookies are made with just two ingredients and were a real surprise even for an experimenter like me 🙂 They can be decorated with dark chocolate, but they are wonderful even without it.
🛒 Ingredients
• 200 g sunflower seeds
• 1/3 cup (80 ml) maple syrup
Decoration (optional)
100 g dark chocolate
1 tsp coconut oil
Crushed nuts
👩🏻🍳 Instructions
1. Blend the sunflower seeds until they turn into a flour. Do not overblend or they may release too much oil.
2. Mix the sunflower seed flour with the maple syrup until a sticky mixture forms.
3. Shape the cookies with slightly wet hands and gently flatten them.
4. Bake in a preheated oven at 180°C (350°F) for about 12-13 minutes until lightly golden.
5. Let them cool completely for about 15 minutes so they firm up.
Decoration (optional)
Melt the chocolate and coconut oil over a double boiler.
Dip each cookie into the melted chocolate and sprinkle with crushed nuts.
