Apricot Walnut Tuffles
Simple, naturally sweet truffles made with dried apricots, walnuts and dates, coated in dark chocolate. Soft inside, rich outside, and incredibly easy to make.
🛒 Ingredients
• 120 g dried apricots
• 100 g walnuts
• 100 g dates (about 10–12), pitted
For coating (optional)
• 100 g dark chocolate
• 1 tsp coconut oil
👩🏻🍳 Instructions
1. Rinse the dates with water. Do not soak them. Pat dry and remove the pits.
2. Lightly toast the walnuts in a pan over medium heat. This step is optional, but it enhances the flavor. Let them cool slightly.
3. Set aside a few apricots for decoration. Chop them into small pieces and leave aside.
4. Add the walnuts, dates and apricots to a blender fitted with an S-blade. Blend until a sticky mixture forms that can be shaped into balls. It’s nice to leave the walnuts slightly chunky for texture.
5. Shape the mixture into small balls and place them in the freezer for 1 hour.
6. Melt the dark chocolate and coconut oil (optional) over a double boiler.
7. Dip each truffle into the melted chocolate and place them on a tray lined with baking paper.
8. While the chocolate is still soft, decorate with small pieces of apricot.
9. Refrigerate until the chocolate is fully set.
Store the truffles in an airtight container in the refrigerator.
