Greek Fava Stew
A healthy, easy, delicious, and satisfying Greek fava stew - packed with vegetables and made without oil 🥦
🛒 Ingredients (3 servings)
• 1 cup Greek fava (or yellow split peas / or chana dal), soaked overnight
• 2 zucchinis
• 2 carrots
• 5–6 broccoli florets
• The white part of 1 leek (or 1 onion)
• 100 ml thick tomato sauce
• 1/2 tsp dried mint
• 1 1/2 tsp salt
• 1 cup water (for cooking)
👨🍳 Preparation
1. Rinse the fava soaked overnight.
2. Chop the vegetables - finely slice the leek, dice the carrots and zucchinis, and cut the broccoli into larger pieces.
3. Add all ingredients together with the water into the Instant Pot and stir gently.
4. Cook on high pressure for 10 minutes.
Let it sit for another 10 minutes, release any remaining steam (if any), open, and stir gently so everything combines.
If using olive oil, add it now and mix. I don’t add any oil - and the flavor is just as good.
