Mung Bean Stew (Instantpot)
This might not be the prettiest dish, but it’s incredibly tasty, nourishing, and ready in just 30 minutes. Simple ingredients, no fancy spices, and packed with plant-based protein – the perfect way to enjoy more legumes.
🛒 Ingredients (4 servings)
• 1 cup mung beans
• 1 zucchini
• 1 carrot
• 1 leek or 1 onion
• 2 tbsp tomato paste
• 1 tsp dried mint
• 1 tbsp dried vegetables
• 1 tsp salt
• 2 tbsp olive oil
👨🍳 Instructions
Soak the mung beans overnight and rinse well.
Chop the vegetables into small cubes.
Add everything to the Instant Pot with 2 cups of water.
Cook on high pressure for 12 minutes.
Let it sit for 12 more minutes before releasing the pressure.
Add olive oil, stir and serve warm.
