Almond Cheese
A delicious and healthy vegan alternative to traditional feta cheese, with a mild flavor and great texture.
🛒 Ingredients
160 g unpeeled almonds (or 150 g peeled)
150 ml water
1 tsp agar-agar
2 probiotic capsules (optional)
juice of 1 lemon
1/2 tsp salt
👨🍳 Instructions
Pour hot water over the almonds and let them soak overnight. Drain, peel, and rinse them well.
Add the almonds, lemon juice, and salt to a blender.
In a small pot, mix the agar-agar with the water, bring to a boil, and cook for 1 minute while stirring well.
Pour the warm agar mixture into the blender and blend until smooth. The mixture should be thick, like hummus.
If using probiotics, open the capsules and add the contents. Blend briefly on "pulse" just enough to distribute evenly.
Lightly oil the container you’ll use to mold the cheese—this makes it easier to remove later.
Transfer the mixture to the container and refrigerate for 2 hours to cool and set.
