Greek Fava with Vegetables
I love adding vegetables when I cook fava, yellow split peas, or red lentils. The dish becomes much more interesting and super tasty.
🛒 Ingredients (3 servings)
• 1 cup Greek fava (soaked overnight)
• 2 cups water
• 1 zucchini
• 2 carrots
• 1 onion
• mint
• salt
• 50 ml thick tomato juice
• 2 tbsp olive oil
👨🍳 Preparation
Soak the fava for a few hours (ideally overnight). Rinse well.
Peel and chop the onion, zucchini, and carrots.
In the Instantpot, add the vegetables first, then the fava, salt, mint, and water. Do not stir, so the dish doesn't stick!
Cook on high pressure for 5 minutes.
Once the cooking time is over, wait 5 minutes before opening the Instantpot.
Add the tomato juice and olive oil. Stir and close the lid again for a few minutes to let the flavors combine.
