Marzipan Bites
Super simple yet incredibly delicious treats made with just 2 ingredients – blanched almonds and dates.
I coat them in dark chocolate to resemble our family’s favorite marzipan, but if you don’t feel like dealing with chocolate, you can roll them in cacao, carob, or crushed nuts.
🛒 Ingredients for the bites (15 pieces)
• 150 g blanched almonds (soaked overnight)
• 150 g pitted dates
🛒 Ingredients for the coating
• 100 g dark chocolate
• 1 tsp coconut oil
👨🍳 Instructions
Soak the almonds overnight and rinse them well.
Add the almonds and dates to a food processor and blend into a dough using the S-blade. I use the pulse function.
Shape the mixture into balls and place them in the freezer for 2 hours.
Freezing and the next steps are only needed if you're coating them in chocolate. If you plan to roll them in something else, skip this step and roll them now.
Melt the chocolate and coconut oil using a double boiler.
Dip the bites in the chocolate mixture and place them on a board or tray. Refrigerate until the chocolate sets.
