Cabbge with Kidney Beans
This is a family favorite in our home — easy to make, full of flavor, and loaded with plant-based protein and fiber. 💚
🛒 Ingredients
• 1 medium head of cabbage
• 150 ml tomato purée, diluted with a little water
• 2 tbsp paprika
• 2–3 tbsp apple cider vinegar
• 3 bay leaves
• 4–5 allspice berries
• 2 tbsp dried vegetables without MSG (available in stores from various brands)
• salt
🛒 Second phase
• cooked cabbage
• 2 cans of red beans (400 g each)
• 2 tbsp ajvar or lutenitsa
👨🍳 Instructions
Slice the cabbage and massage it with the paprika, salt, dried vegetables, vinegar, and diluted tomato purée. Add the bay leaves and spices, and cook everything in a pot or pressure cooker.
I use Instantpot and cook it on high pressure for 20 minutes, adding 150 ml of water.
Mix the cooked cabbage, beans, and ajvar well, then transfer to a baking dish. Bake at 200°C (400°F) until nicely browned.
