Chewy Cashew Cookies
If you love tasty, slightly chewy cookies made without flour, gluten-free and with just a few simple ingredients, this recipe is perfect for you π
π Ingredients
β’ 1 1/2 cups (200 g) raw cashews
β’ 1/3 cup (80 ml) maple syrup
π« Optional coating
100 g dark chocolate
1 tsp coconut oil
π©π»βπ³ Instructions
1. Blend the cashews until you get a fine flour. Do not over-blend, otherwise you may end up with cashew butter. Itβs perfectly fine if a few slightly larger pieces remain.
2. Mix the cashew flour and the maple syrup until well combined.
3. Using slightly wet hands, shape the cookies. Gently flatten them with your hand or a flat object.
4. Bake at 180Β°C (350Β°F) for 12β13 minutes, until lightly golden.
5. Let them cool completely for 30 minutes.
Decoration (optional)
1. Melt the chocolate with coconut oil over a double boiler.
If you prefer not to use chocolate for decoration, you can roll the truffles in crushed pistachios, shredded coconut, or cocoa powder.
2. Dip the chilled truffles into the melted chocolate and let them set on parchment paper.
