🛒 Ingredients (2–3 servings)
• 1 cup red lentils (soaked for 4 hours)
• 1 zucchini
• 2 carrots
• 1 onion
• 5–6 broccoli florets
• 150 ml thick tomato juice
• ½ tsp dried mint (other herbs)
• 1 tbsp dried vegetables (optional)
• 1 tsp salt
• 1½ cups water
👨🍳 Instructions
1. Rinse the lentils.
2. Dice the onion, carrots, and zucchini. Cut the broccoli into larger pieces.
3. Add everything to the Instant Pot with the water and stir gently.
4. Cook on high pressure for 5 minutes, then wait another 5 before releasing the steam.
5. Stir lightly to mix the flavors. Add a touch of olive oil if you wish.
