🛒 Ingredients
• 1 1/2 cups (200 g) raw pistachios
• 1/3 cup (80 ml) maple syrup
👩🏻🍳 Instructions
1. Blend the pistachios in a food processor until you get a flour-like texture. Do not over-blend, as it may turn into pistachio butter. It’s perfectly fine if a few larger pieces remain.
2. Mix the ground pistachios and the maple syrup well.
3. With wet hands, shape the cookies. Gently press them down and decorate with a few larger pieces from the mixture.
4. Bake at 170°C (340°F) until lightly golden. They burn quickly, so keep an eye on them.
5. Let them cool completely for about 30 minutes.
