Cabbage, Celery, Carrot & Pepper Salad
This is my favorite salad right now – fresh, crunchy, and long-lasting. It keeps well in the fridge for several days, making it perfect for meal prep.
🛒 Ingredients
1/2 head of cabbage
4–5 carrots
1 stalk of leafy celery
3 bell peppers
1 bunch parsley
1 bunch celery leaves
1 red onion
Olive oil
Apple cider vinegar
Salt
👨🍳 Instructions
Wash and clean all vegetables and herbs.
Thinly slice the cabbage and massage it in a bowl with a little olive oil and salt.
Add the thinly sliced onion and mix.
Grate the carrots or slice them into strips using a V-slicer.
Chop the peppers, parsley, and celery.
Combine everything in a large bowl and mix well.
Season with olive oil, apple cider vinegar, and a pinch of salt. Adjust flavors when serving, if needed.
Store the salad in the fridge – it lasts 3–4 days.
