Sweet Potato Cream Soup

🛒 Ingredients (3 servings)
• 1 sweet potato
• 2 carrots
• 1 medium potato
• curry powder
• salt
• 2 tbsp olive oil
👨🍳 Instructions
Peel and roughly chop the vegetables. Cook them with 1 tsp of salt and enough water until soft. I use an Instant Pot and pressure cook for 5 minutes.
Before blending, set aside some of the cooking water to adjust consistency later.
Add salt and curry to taste, then blend until smooth and creamy.
Taste and adjust seasoning if needed.
Stir in the olive oil and mix well.
