Coconut Crisps
Crispy, naturally sweet, and incredibly easy to make – these cookies need only shredded coconut and maple syrup.
🛒 Ingredients (25 cookies)
• 2 cups (140 g) shredded coconut
• 6 tbsp (90 ml) maple syrup
👨🍳 Preparation
In a bowl, mix the ingredients well until all the coconut is coated with the maple syrup. This will act as the binder in the recipe.
On a baking tray lined with parchment paper, shape round cookies using a cookie cutter. Place the cutter, scoop the mixture inside, and press down with something flat. I used the flat end of a coffee tamper.
My cutter is 6 cm wide, and I used 1 tbsp of the mixture per cookie.
Bake at 180°C (356°F) for 10–11 minutes or until the edges are golden.
Let them cool completely before touching – the caramel will firm up as it cools!
