Apricot Tuffles
🛒 Ingredients
• 200 g dried apricots
• 150 g almonds (blanched or unblanched)
• 10 dates
• 200 g dark chocolate (85%)
• 2 tsp coconut oil
👩🏻🍳 Instructions
1. Cover the almonds with hot water and soak overnight.
2. Rinse the almonds well and remove the skins.
If you don’t feel like peeling them, buy blanched almonds - I just prefer doing it myself.
3. Remove the pits from the dates.
4. Blend the almonds, apricots, and dates.
My idea was to make truffles with a delicate, slightly crumbly center where you can feel the little pieces of nuts and fruit. If you prefer a stickier mixture, add a few more dates and blend a bit longer.
5. Shape the mixture into truffles and freeze for 2 hours.
6. Shortly before removing them from the freezer, melt the chocolate and coconut oil over a double boiler.
7. Dip each truffle into the melted chocolate and refrigerate until fully set.
Store in an airtight container in the fridge.
